Wenda's had two great (long) video tutorials on creating environments. Althought they are for Cryengine, the principals are more than translateable to other engines. the first one he discuses his workflow on creating realistic environments using Worldmachine, mudbox and Cryengine. The second series goes over how he creates his modular rocks. Both are brilliant and are well worth the watch.

On the topic of rocks, Boyo has a really great breakdown of his process of texturing rocks. This method is fantastic to create realistic looking pieces.
